First of for me, I think of these as Virtues.  While the "Pillars" are 
the 3 Pillars of the SCA, Service, Arts & Sciences, Chevalier

My cornerstone of Knightly Virtues are Faith, Honor & Loyalty.  From 
each of these or within each of these the balance of Virtues are included.

Those being (but not limited to)
Prowess
Loyalty
Faith
Courage
Respect
Largesse
Justice
Strength
Defence
Courtesy
Pagentry
Franchise


As to defining Prowess to each of the Peerages  I can say it no better 
than those that have already posted.
