*Uprising XXI (2007) Combat Cooking Competition*

*Friday, June 15.*

*Artemisian cooks:  We must prepare to compete at the Estrella War in the
Siege Cooking competition.  To this end, Mistress Casamira will sponsor a
competition at Uprising based largely upon the same rules used for the
Estrella War competition.    *Participation in the Estrella War cooking
competition is not guaranteed nor required as a term of entry into or
winning the Uprising competition.

   *The purpose of this Competition is to *


   - *promote interest in foods and cookery of the "period" prior to 1600
   AD; *
   - *to promote period cooking within Artemisia. *
   - *to practice to win the cooking competition at Estrella War.*

*All Teams must pre-register to enter this competition by June 2**nd**.*

*A minimum of 2 teams and maximum of 4 teams can register for the
competition to be scheduled.*

*The Combat Cookery Coordinator will provide most of the necessary edibles,
including staples and spices, for a several-dish meal. *

*The teams will prepare a meal of at least four dishes to feed about ten
people. *

*NOTE:  The judges will sample the food, but most of the food is yours to
feed your encampment, friends, rulers, judging spectators, hungry warriors,
etc.*

*Bragging rights will be allocated, and winning team members will be
decorated. *

*General Guidelines:*

We will consider quality of cookery, variety, originality, flavor, and
presentation/visual appeal of food presented, as well as the identification
of the ingredients, recipes and/or use of foods, preparation techniques and
tools, and the presentation of a good, "period" meal.

No one, except the Cooking Coordinator, will know what ingredients will be
provided before the start of the competition.

   All teams will receive an advance list of ingredients they can supply,
   if desired, from their own pantry.


   On Site: a box of numbered, but unlabeled ingredients that will
   include "portions" in sufficient quantity to feed about 10
people.withat least 2 different "portions" of meat / fish / fowl,
Spices, fruits ,
   vegetables, and several types of nuts and grains


   A form to fill out & turn into the judges to identify each ingredient.


   A Scenario that will specify the ethnic / geographic area for the
   competition.


   The Scenario from Estrella War indicated a Scandinavian "trader" who
   returned from a 2 year expedition.  He asked his wife to prepare his
   favorite dishes and asked her to incorporate some of the ingredients he
   found on his travels.   The Uprising scenario will not be Scandinavian.


   No written "documentation" will be required during this competition;
   however use of period books, reference, recipes and cooking methods is
   STRONGLY encouraged.


   Each team will know at the start of the competition when to bring
   their food to the A&S tent to be judged. (We're working to arrange motorized
   transportation for the food!)


   *A Team:*


   Each pre-registered team shall have a maximum of seven (7) members:

Up to five cooks who participate in the preparation of the dishes plus two
scullery members who do not "touch" the food for any type of preparation,
cooking or presentation purposes.  Scullery members can haul water, light
fires, set the feast area, carry supplies (including ingredients) to the
cooks, assist in identifying individual ingredients.    They cannot grind
grain, peel carrots, or arrange food on the serving tray.

   One team member will be designated as the Chief Cook, whose
   responsibilities shall include all communication with Combat Cookery
   Coordinator prior to the competition and the organization of the team.


   *Judges:*


   Casamira will recruit the judges.  These gentles must report to the
   Cooking Coordinator initially at Noon on the day of the Competition to
   perform a brief walkthrough of each of the kitchens. They must then return
   at 3:00 PM on the day of Competition to begin the judging.

*Times:*

Each team shall send one person to the staging area near Arts & Sciences
tent* * to register and to get their team start time assignment. These
individuals will be responsible for providing the names of their team
members and that of their judge at time of registration. In addition, each
team must specify the location of and directions to their Competition
kitchen.

      The first team start time will be at 8:30 AM. Cooking times shall run
as follows:

     *Start Time* *Finish Time* Team 1 8:30 AM 3:30 PM Team * 2* 9:30 AM 4:30
   PM Team 3 10:30 AM 5:30 PM Team 4 11:30 AM 6:30 PM

 Each team shall assemble at the staging area at their appointed start time
to receive their food and other ingredients. *Each team is expected to bring
a cooler at this time to transport all ingredients that require
refrigeration to their own kitchen for safety. *No team shall reveal
*any *information about ingredients until
*all* the teams have received their ingredients.

No team is to use *any* ingredients other than what they are provided, or
what is on their allowable list, to create their dishes.

At Noon, the larder will be opened.  Each Team may return to the Coordinator
and choose 2 additional ingredients, or beg the Coordinator to allow the
team to use ONE ingredient from their own larder.

Judging will start 7 hours after each team receives their ingredients. Once
a team's finish time has been reached, no further preparation will be
allowed, and the Judges will immediately begin assessment of the meal.

*Kitchens:*

   - Each team must provide their kitchen facilities on the Uprising
   site. Kitchens should be established within individual camp sites; however,
   these must be easily found by and accessible to the Judges.
   - Each kitchen must include means for cooking * without
electricity.*Wood, charcoal,
   white gas, and/or propane are acceptable fuels. Other means of cooking must
   be pre-authorized on a case-by-case basis—please contact the Cookery
   Coordinator prior to the Competition or at time of team registration.
   - Each kitchen must provide all the tools and equipment needed to
   prepare the meal, including. pots and pans' bowls and containers, knives and
   cooking utensils, serving dishes and utensils, and tableware. Remember,
   authenticity of these items will be considered as part of the judging
   process. (Borrowing equipment from a neighboring encampment is ok with the
   judges as long as you've made those arrangements with the equipment owners!)
   - Each kitchen must provide enough potable water for all cooking and
   sanitation needs.  Each team may bring and use any cookbooks, recipes, or
   other source material they wish. No documentation is required (but is
   encouraged) for this competition. Remember that authenticity of food
   preparation, usage, and presentation will be considered.

*Judging:*

   - Judging will occur in the Arts & Sciences Tent on site.  You will be
   allowed 10 minutes to "set up" a feast table and a sideboard within the
   pavilion.  The tables & chairs for the judges will be provided.
   - The Chief Cook will be responsible for answering any Judge's
   question(s) during the judging process.  While not required, keeping notes
   with recipes used is suggested.  Because of past interest for the recipes of
   the dishes prepared, The Combat Cookery Coordinator request that each Team
   prepares recipes for all dishes prepared to be included in a cookbook.
   - The judging will be* open to the public to view.*
   - The purpose of this competition is to facilitate an interest in and
   appreciation of well-executed "period" cooking. The quality of cookery,
   variety, originality, flavor, and presentation/visual appeal of food will be
   of primary consideration. Because we are a *historical re-creation
   organization with a strong interest in the pre-1600 AD time
period,*significant consideration in judging will be taken concerning
recipes used,
   cooking methods/tools/techniques, and settings created for the presentation
   of the food.
   - No documentation will be required or judged in this competition.

*Results:*

   - Results of the Combat Cookery Competition will be announced at a
   Court following the competition.  All members of the teams are encouraged to
   attend.
