I don't know about mustard, having never made horseradish mustard. However,
for the feast I cooked this past weekend, I used this recipe for candied
horseradish - http://www.medievalcookery.com/recipes/horseradish.shtm - and
it went over VERY well - doesn't taste anything at all like one would
expect, to the point where I passed it out to all the kitchen staff and had
them guess what it was and no one got it, but everyone at the feast enjoyed
it.
