A rather obvious first pass would involve looking at the "tracks"  
adopted by the various Known World collegia, scholae, &c. There is no  
need to reinvent the wheel and doing so would tend to confuse people.

For example. Dance European could be replaced by such things as:
Dance -- Italian 15c-16c
Dance -- Basse Dance
Dance -- Inns of Court
Dance -- English Country
Dance -- European Folk

However, you might want to drop in European in the middle for those  
who are unfamiliar with what Inns of Court is about.
Dance -- European -- Italian 15c-16c
Dance -- European -- Basse Dance
Dance -- European -- Inns of Court
Dance -- European -- English Country
Dance -- European -- European Folk

That sort of thing. Anyway, there are Known World Scholae for many  
high-traffic areas. They exist for Cooking, Bards, Calligraphy,  
Illumination, Dance, Heraldry, &c. Known World Dance Symposium was  
earlier this month in Ealdormere.
