That sounds like something from either one of the color fairy books (I know that there were blue and green) rather than an original Grimm's Brothers.  Sorry I can't be of more help, but it's been years for me too.

Hi, 
I have been searching for this story for years.
My father told me a bedtime story of a young man who met a lady in a cave.? He wanted to compete in a joust to win the princess(what else could he want?)? But he didn't have a horse or armor, suddenly he sees a beautiful blood red horse with matching armor.? she tells him to throw the pebble she gave him over the horse he does and the horse becomes his, he then wins the feather, two more nights with two more horses and he has all the feathers and surprises the girls dad with the traditional, see I have them all I win.
But Dad never told me where he read it, he wasn't a big reader but its been twenty years and I don't remember enough of the story to tell my midget, any help would be great.
