Oh man, now you have me REALLY hungry!! 10:30 would be wonderful...Una
cooks, Phaedra dances..but Una may send Phaedra out to learn how to cook the
bread so no garb change is involved...okay, now I'm in an identity crisis!
:) Oh well, either way we will learn to both bake bread and dance!!!

Una, or rather Phaedra, or both of you if I am seeing double - I guess the
first part of the class starts with this - timing the bread to be done at
dinner time.
I am going to assume dinner will be at 6-ish. Counting this out, I start the
sponge to rise and let it go for about 3 hours depending on ambient
temperature. I will work it into dough (about a 1/2 hour depending on how
much I talk). In about 2+ hours we should have dough to put into the pans
(Dutch ovens this time) and an hour later we will have it risen in the pans
ready to bake. I am going to figure 1 hour for baking time to be safe - it
shouldn't take that long though.
Add it all up and I should start the process at 1000 hrs (notice i added a
1/2 hour in there for 'cause its better to be early with the bread than
serve dough). If dinner is at 1800 then we start class at 1000. (I did that
on a cheat-sheet btw.)
The three hours while the sponge grows would be a good time for your class
(therefore you starting at 1030 would work great for the dough).
The next step on the dough would be at 1300, when I actually make the sponge
into something tangible. What do we want? Some Feta or some Toasted
Garlic/Rosemary with whole wheat? Onion? Dill? Maybe a loaf of each? (are ya
hungery yet?)
That is the first part of the class and you're all invited to join in.
