Gentle Cousins,
Once again I am reminded why I love my Artemisian family. We have a great wealth
of knowledge and are willing to share what we know. What a great "Colony" we
would make!
As far as preserving foods, our ancestors were good at it. And if things didn't
have optimal flavor, they ate it anyway. I think our modern palates would
definitely need to change. There would be no more Del Monte, Chef-boy-ardee or
Wonder Bread. Wild yeasts make great sour-dough, though it won't taste like San
Francisco sourdough. The bread won't be as light and fluffy as the chemically
enhanced store bought bread we can get today. Our digestive tracts would have
some definite adjusting to do to accommodate all that newly introduced fiber!

Meats can be preserved in many ways. Lard preservation, canning, drying,
pickling, salting and smoking. You can do an internet search and find thousands
of ways to smoke meats. One of the simplest methods used in our period of study
was to hang said chunk of meat up in the chimney of the home fireplace. There
would be smoke going 24/7. The meat would kept out of the direct heat of the
fire by either hanging the meat close to the wall or actually making niches in
the chimney wall for that purpose. I can imagine that meat would be quite dried
out by the end of winter, but would also be a welcome addition to whatever
pottage was being prepared.
Picklling is another way to preserve not only meat but vegetables as well. Most
home grown veggies have naturally occurring lactic acid on their skins. Lactic
acid is what keeps the bad bacteria at bay until active fermentation can take
hold. The white film on grapes and cabbage contain yeast spores but that is also
where the lactic acid is located. Nothing more than cabbage, salt and a large
vessel is needed to make sauerkraut. The rest nature takes care of.
I would happily trade my preservation skills with a seamstress or taylor to keep
my family clothed and theirs fed!

First, a quick apology- my account was "spoofed" at 9:40 am today, those of you
who have a message from me with no subject that you have not read yet, don't
read it, just delete it. Apologies to all for the inconvenience.
Second, regarding Redhawk being blown to bits, as noted in the book "Alas,
Babylon", due to the large number of missile silos in MT, and Malmstrom AFB
being a NORAD Command Center (2nd in the chain) in Great Falls specifically,
Montana (and GF specifically) would be targeted for multiple missile hits- the
entire state would be a blast crater/fallout zone.
On a related note, does anybody else remember in the mid-80s, when some nuclear
material was being transported by train across the country and the anti-nuke
protesters raced the train to every town along the route? My high school pals
an I got a huge laugh at the obvious non-residents waving "no nukes in our town"
signs at a train while an Air Force warhead transport truck and escort drove
right past them unnoticed.
