Wild yeast is sometimes called starter or sourdough. The stuff I have is NOT sour, hence no sourdough, but when I say 'starter" folks frequently don't understand what I am getting at.
In period, the baker typically didnt 'buy' yeast. A yeast culture was kept in a warm place and allowed to 'work'. When the baker got ready to make bread, a small amount of the yeast culture was added to the flour, water, salt, sugar, and other bread making ingredients.
One can 'start' ones own, but it is easier to get some that has yeast culture growing already. The stuff I have was 'started' around 160 years ago, and has had some form of itself constantly growing since. One can dehydrate the starter and then store it in the freezer to 'start' later.
Bread made with starter yeast (as opposed to commercially available 'dry' yeast that one purchases at a modern grocery store) takes much longer to raise. Trust me on this one ... the end result is worth the wait.
